Our storage strategies begin with historically successful methods and are chosen for their most beneficial qualities. Of course fresh is always the best but when products are out of season or come in abundance preservation is an amazing alternative. Preserving is also an opportunity to create new products from the base ingredients. For instance we specialize in the art of pickling, creating jams and curing meats.
